Cinnamon Cake with Apple Compote & Brown Sugar Buttercream
Don't you just hate when a delicious pie has a soggy crust or sticks to the dish. I want the spiced apple insides with a moist cinnamon cake. The end result gives you a wonderful mix between pie and cake. Big smiles all around!Cinnamon Cake Recipe
1 ~ Cup ~ ~ Cake Flour½ ~ Cup ~ ~ All Purpose Flour
½ ~ Teaspoon ~ ~ Baking Powder
1 ~ Teaspoon ~ ~ Baking Soda¼ ~ Teaspoon ~ ~ Salt
1 ~ Teaspoon ~ ~ Nutmeg
1 ~ Tablespoon ~ ~ Cinnamon
½ ~ Cup ~ ~ Butter (softened)
¾ ~ Cup ~ ~ Sugar
2 ~ Large ~ ~ Eggs
1 ~ Teaspoon ~ ~ Vanilla
¾ ~ Cup ~ ~ Milk
Brown Sugar Buttercream
8 ~ Tablespoons ~ ~ Butter (softened)2 ~ Tablespoons ~ ~ Heavy Whipping Cream (cold)
3 ~ Tablespoons ~ ~ Brown Sugar
¼ ~ Teaspoon ~ ~ Cinnamon
2½ ~ Cups ~ ~ Powdered Sugar (sifted)

Apple Compote
3 ~ Medium ~ ~ Apples½ ~ Cup ~ ~ Water
½ ~ Tablespoon ~ ~ Cinnamon
1/3 ~ Cup ~ ~ Sugar
2 ~ Tablespoon ~ ~ Brown Sugar
¼ ~ Teaspoon ~ ~ Nutmeg
¼ ~ Teaspoon ~ ~ Apple Pie Spice
Now for the fun part
Preheat oven to 350F. Butter and flour one 9" round baking pan.Step 1 ~ Sift Dry Ingredients
In a medium measuring cup sift together cake & a.p. flour, baking powder, baking soda, salt, nutmeg & cinnamon. Set aside.
Step 2 ~ Cream The Butter
In a large mixing bowl cream together butter and sugar. I use a the back of a fork to mush the two together, similar to mushing a banana. Then add the eggs and vanilla, with the same motion to break the yolks and combine the ingredients. Set this aside also.
Step 3 ~ Mix It Up
Now you have 3 items: wet (milk), dry (flour ect.) & cream (butter ect.). The cream is the center. Alternate between wet and dry, adding to the cream mixture. Three items back and forth blending each time. There is your batter. It smells so good. Even better when it bakes.Step 4 ~ Bake Baby
Poor batter into prepared baking dish and place in oven on middle rack. Set your timer for 25 minutes to start. Mine baked for 33 minutes this time but, remember you can always add more time if needed. Remove once it is done baking and let cool in pan for about 5 minutes. Turn out onto parchment paper lined cooling rack and let cool for about 10 minutes.
Step 5 ~ Apple Pie Filling
I begin this step as soon as I pop the cake in the oven. Peel and dice apples. I did small dice, you just want the pieces to be equal size.
In a small sauce pan combine all the compote ingredients (listed above) and bring to boil slowly over medium heat. Once it has reach a steady boil turn heat to medium-low and simmer for 20 minutes. Then remove from heat and let stand for 15 minutes. The apples should be fork tender and the sauce reduced to a thick consistency. When you add it between the cake layers you don't want the sauce to be runny or it will cause the cake to become soggy. I took a pastry brush with the excess sauce and basted the edges of the cake to soften it just a little. That way you don't waste any of that deliciously sweet, cinnamon sauce.Step 6 ~ Whip It
For this cake I wanted to round out the apple pie experience with a brown sugar & cinnamon icing. I apologize but, I got excited and forgot to take pictures for this process. I just whipped the butter until it was a very pale shade of yellow (about 3 minutes on medium speed). Add the heavy whipping cream to the butter and continue to whip an additional 3 minutes. Now on low speed, slowly add the remaining ingredients. Begin with the brown sugar then the vanilla and finish with the powdered sugar. Once all ingredients are blended, scrap down the sides of the bowl and whip on medium-high speed for 4 minutes. Done and yum!Step 7 ~ Slice Step 8 ~ Fill Step 9 ~ Frost Step 10 ~ Decorate
