Almond Cookies w/ Honey Glaze
Cookie Recipe
2 ~ C. ~ Finely Ground Almonds1 1/2 ~ C. ~ Pastry Flour
1 ~ C. ~ Sugar
1 ~ C. ~ Butter (softened)
2 ~ L. ~ Eggs
1 1/2 ~ C. ~ Vanilla Extract
Honey Glaze
2 ~ T. ~ Honey1 ~ t. ~ Water
1/2 ~ C. ~ Powdered Sugar
Mix It, Bake It, Glaze It, Eat It
Its as simple as that!Let's get started!
Pre-heat oven to 350°F
Step 1 ~ Toast Almonds
I had whole, raw almonds on hand. So I toasted them in a frying pan on medium-low heat for about 10 minutes. Let them cool while you get the rest of the ingredients together. Once cool, pulse almonds in food processor. You want them pretty fine because it replaces most of the flour in a typical cookie recipe. Measure out 2 Cups.Step 2 ~ Cream Butter & Sugar
Your butter should be soft (not melted) so that it mixes with the sugar evenly. Use a medium to large mixing bowl because everything will be added to this bowl. I use the back of a fork and with my pointer finger I press the butter onto the side of the bowl. Similar to smushing bananas.Step 3 ~ Add Wet Ingredients
Add the eggs and vanilla extract to the butter/ sugar mixture. Mix until incorporated.Step 4 ~ Add Dry ingredients
Add the ground almonds first. Then add the flour, careful not to over mix. The cookie dough will be sticky.Step 5 ~ Shape & Bake
Line a baking sheet with a silpat or waxed paper. Which ever you have works fine. Use a small spoon to scoop a 1/2 tablespoon size dough and use your pointer finger to slide the dough off the spoon. I then press down in the middle of cookie to flatten out. The amount should form a cookie no larger than 2 inches uncooked. It will spread a little. On a half sheet pan I fit 4 × 6, so 24 cookies. Pop in thr pre-heated oven for 4 minutes, rotate pan then bake an additional 3-5 minutes. The edges with be a nice golden color. Remove and let cool. Bake off the rest of the dough. Recipe yields about 64 cookies. Yum. That's about enough to share, maybe!Step 6 ~ Glaze
I love this simple glaze. The cookies themselves aren't overly sweet, so this glaze adds just a touch. I warm the honey and water together in microwave for about 30 seconds. Then add the powdered sugar. I just mix with a fork, helps with lumps. Adjust powdered sugar amount until you get the consistency you desire. I like my glaze runny so I can just drizzle over the cookies.That's it. I hope you enjoy. Be careful not to eat them all in one sitting!
